Gluconic Acid
Gluconic acid is an organic compound formula C6H12O7. It is aqueous solution at 50% active in water of pH between 1.5-2.5. The gluconic acid forms the gluconate ion. The chemical structure of gluconic acid consists of a six-carbon chain, with five hydroxyl groups positioned in the same way as in the open-chained form of glucose, terminating in a carboxylic acid group. In aqueous solution, gluconic acid exists in equilibrium with the cyclic ester glucono delta-lactone. The gluconic acid is produced by using Fermentation process of Glucose.
It is commonly used as a food additive, primarily as a sour-tasting, acidulant and flavor enhancer in a variety of food products. Gluconic acid act as a tenderizer and dough conditioner in baking applications, as well as a pH regulator and preservative in processed foods.
In addition to its food application in Metal treatment, oil well drilling and completion fuids.
